- 1 small Red Cabbage
- 3 tbsp sunflower seeds
- 2 tbsp chopped parsley
- ¼ fennel bulb shaved finely
- 1 tbsp lemon juice
- 2 tbsp tamari soy sauce
- ¼ Cup olive oil
- 1 tsp sesame oil
- 1 tbsp apple cider vinegar
Chop the cabbage into quarters and remove the solid middle. Slice very finely, or use a handheld mandolin to do this in seconds. I have this one:

In a mug or jar whisk together the dressing ingredients, and pour over the cabbage and fennel. Toss thoroughly to combine. Sprinkle the sunflower seeds and parsley over the top and serve.
