Winter Red Cabbage Slaw

  • 1 small Red Cabbage
  • 3 tbsp sunflower seeds
  • 2 tbsp chopped parsley
  • ¼ fennel bulb shaved finely
  • 1 tbsp lemon juice
  • 2 tbsp tamari soy sauce
  • ¼ Cup olive oil
  • 1 tsp sesame oil
  • 1 tbsp apple cider vinegar
Chop the cabbage into quarters and remove the solid middle. Slice very finely, or use a handheld mandolin to do this in seconds. I have this one: Zyliss Hand Held Slicer with Adjustable Blades and Julienne Slicer But I kind of wish I had this one, it looks a bit sturdier and has different blades: VonShef ‘V’ Shaped Multi Slicer with 5 Blades inc. Mandoline & Storage Container In a mug or jar whisk together the dressing ingredients, and pour over the cabbage and fennel. Toss thoroughly to combine. Sprinkle the sunflower seeds and parsley over the top and serve.
