Spinach French Toast

Supercharge a Sunday night staple. So simple and yet such a great way of adding the great greens in. This really does take seconds for a lazy supper that the kids wolf down. It tastes amazing and does fabulous things. Eggs are great sources of protein and Omega 3s. Spinach takes it up a level. More vitamin K than most other veg, for bone growing, and masses of iron for blood health and energy, there's loads of Vit A, C, folic acid as well as manganese, magnesium, vit B2.
  • 4 pieces of bread
  • 3 eggs
  • Handful Spinach finely ribboned
  • Sea Salt and Black Pepper
  • 1 tbsp Butter or Coconut Oil melted
Serves 4 Crack the eggs into a bowl, and beat together. Chop the spinach finely, and add to the whisked eggs, with salt and pepper to taste. Soak the bread in, until it has absorbed a lot, flipping to cover both sides with some spinach. Heat butter in a prying pan. Fry for a couple minutes on each side until nicely browned and getting crispy. Done. Delicious.
