Spinach Egg Mini Muffins

Makes 16
  • 6 Eggs
  • 50 g spinach, sliced into ribbons
  • 1 Leek finely sliced
  • 100g grated cheese or crumbled goats cheese
  • Salt and Pepper
  • Optional add ons: Shredded ham, diced pepper etc
Oven at 180 Silicone Muffin Trays make all the difference to baking anything like this as they require no linings or greasing and the muffins come right out not chiselling involved. I use them for all baking now. Crack eggs into bowl, add seasoning, whisk with an electric whisk for a few minutes until pale and frothy. Fold in spinach, leeks and cheese plus any extras, trying to keep the volume. Pour into mini muffin tray – if not using a silicone tray grease well, they can stick badly. And bake for 10-15 minutes depending on size, watch and see when they’re golden and rising beautifully. They will droop a little when cooling. Best eaten when warm. They freeze v well.
