Spiced Plum Quinoa Porridge
Such a tasty, warming winter bowl of goodness to start the day. With bags of protein from the quinoa, seeds and chia and lots of Christmassy flavours and vitamins galore from the plummy topping.
Makes 1 big bowl (serving 2/3 children or 1 hungry adult)
You can make this ahead and keep it in the fridge until needed. Place sliced Plums in a small pan with spices, orange juice, zest and raisins and heat gently until bubbling. Cover with a lid and leave on a low heat simmering for 8-10 minutes until softened and smelling fragrant and amazing. Stir through honey if not sweet enough to taste.
Meantime, in another pan heat the milk with the porridge ingredients, and stir as it bubbles for 3-4 minutes. Spoon into a bowl and cover with the plum topping or mix together for a pink porridge.
- 1 Cup Oats
- ½ Cup Quinoa Flakes
- 1 1/4 Cups Rice Milk (or substititute)
- 1 Tbsp Linseeds
- 1 Tbsp sunflower seeds
- 1 tsp Chia Seeds Plum topping
- 3 Plums, stoned and sliced
- 1 Orange juice and zest
- Pinch ground cloves
- 1 tsp ground cinnamon
- 2 tbsp raisins
- (1 tbsp honey optional)
