Simple Berry Chia Jam

This really is a 10 minute Jam, with no thermometers or vats of bubbling sugar.

We love a fruity piece of toast and commercial jams are mainly sugar - even the 'sugar-free' ones are full of unpronounceable and blood spiking sweeteners. This is fruit filled with added goodness from chia seeds that are little health bombs. Full of calcium, protein and iron they bind it all together and fill you up with goodness.

This is an energy boost in a jar. You'll be making it on repeat with all the berries that come your way as the seasons change.

  • 2 Cups Strawberries/Raspberries/Blackberries/Blueberries
  • 2 tbsp Chia seeds
  • 2 tbsp runny honey
  • 1/2 tsp vanilla bean paste
Hull Strawberries, if using, and halve. Place in saucepan and heat gently, stirring for 5 minutes, bubbling gently. Smash berries with a fork or masher, until pulp. Simmer for another 5 minutes. Remove from heat, add Chia seeds and half the honey, taste and adjust according to sweetness of fruit/tastebuds. Stir through the vanilla now. Pour into a jar and leave to thicken. Keeps in fridge for 10 days.
