Roasted Beetroot & Garlic Dip

Such a perfect, winter wonder of a whizz up, beetroots are packed with iron, antioxidants and vitamins galore, with garlic adding tot he perfect immune kicking dip for you all to enjoy. And it takes no time to make.
  • 4 medium beetroots
  • 5 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp tahini
  • 1 lemon juiced
  • ½ tsp cumin powder
  • 1 tsp Dijon mustard
  • Splash apple cider vinegar
  • Salt and pepper to taste
Roast whole beets and cloves in oven drizzled with oil, and a splash of water in a tightly foil covered baking tray at 170 for approx 45 mins. Check with fork that they’re soft in the middle. Leave to cool. Peel. Add to processor with remaking ingredients til smooth and thick. I added 2 sprigs of parsley to mix it up and it was fabulous. Get at it.
