Pecan Brownie Balls
These are an all time favourite that have been adored by my Cooking classes and all the kids that come near them, and I'm asked for this recipe more than any other, so here it is.
A chocolate treat that's an energy bomb with so much vitamin and mineral goodness, and so filling. They are a whizz in the processor and a world of deliciousness afterwards. Enjoy!

Put nuts in a food processor til they resemble crumble texture – about a minute or two. Add in the Cacao powder, sea salt, almond butter and roughly chopped dates and pulse til a sticky ball starts to come together.
You can either roll these up into energy balls, or flatten them onto a baking tray and freeze, and then chop into slices. Both work really well. If doing balls, just pull off tablespoon size pieces and roll into balls, dust with cacao powder and freeze til firm. Or flatten into a tin and freeze, chopping up into brownie squares later.
Store in the freezer, and you can eat them straight from there, they soften up in minutes. Last for up to 2 months.
- 1 Cup Cashews
- 1 Cup Pecans
- 4 - 6 Medjoo Dates pitted
- 2 tbsp Cacao Powder
- 3 tbsp Almond (or cashew) Butter
- Big pinch Sea Salt
