Figgy Pudding Balls

  • 1 Cup Almonds
  • 1 Cup Walnuts
  • Large pinch ground cinnamon
  • 4 Soft, dried figs
  • 2 tbsp raisins
  • 1 Orange zest plus juice
  • 1 tsp almond butter
  • 1 tbsp maple syrup
Makes 15-20 Put the nuts in a food processot with the cinnamon and a pinch of sea salt. Blend for about a minute until a rough crumb-like texture. Add the orange zest, figs and raisins and pulse until chopped, adding the almond butter and maple syrup soon after. Drizzle in a tablespoon or so of orange juice until the mixture sticks into a big ball. Tear off table tennis ball sized pieces and roll between your palms to form a ball. Cover with Vanilla Custard to serve, if you fancy it, but don't do this ahead of time. Store in the fridge for a week or in the freezer for up to 3 months.
