Chocolate Vanilla Fudge
The loveliest Christmas treat, that can be made ahead for parties, dinners and as presents in little bags. A real fudge, chocolatey treat that's full of goodness.
I use these silicon moulds that come out every year, I use as ice makers too for festive drinks:
They're super simple to make, and little helpers can do lots of pouring and stirring (and bowl licking). Find any moulds and get melting.
Melt the coconut butter and oil in a small pan over a low heat, adding the cashew butter and stirring until smooth and softened. Add the cacao powder, vanilla and maple syrup as you take it off the heat and whisk together to combine well. Tasting to adjust sweetness/chocolate.
Pour into silicone moulds and freeze for 30 mins until set. Pop out of moulds and store in freezer in sealed containers. Best served straight from freezer.
