Choco Coco Granola
Most kids have a serious thing about Coco Pops, so I thought I'd try and crack the chocolate breakfast thing, and this granola is amazing and super easy to make. As a snack in a bag or on yoghurt with bananas, have it any way and know that it's full of goodness, protein and energy. And happens to be grain free.
In a small pan melt the coconut oil, adding the cacao powder and maple syrup to stir through until smooth. Set aside.
Pour all the dry ingredients into a large mixing bowl, and pour over the chocolate mixture adding the vanilla extract and salt. Lay on a large baking tray, so it is thinly spread.
Bake at 190 for 10 minutes before turning over with a wooden spoon. Repeat after another 10 minutes and then remove when dark brown, up to 30 minutes in total.
It will crips up as it cools. Keeps in a jar for weeks.
- 3 tbsp Cacao Powder
- 3 tbsp Maple Syrup
- 3 tbsp Coconut Oil
- Pinch Sea Salt
- 1 tsp Vanilla extract
- 1/4 Cup flaked almonds
- 1/4 Cup Buckwheat Groats
- 1/2 Cup Coconut curls
- 1/2 Cup puffed quinoa
- 1/2 cup quinoa flakes
- 2 tbsp sunflower seeds
- 2 tbsp shelled hemp seeds
