Banana Oat Crunch

Speed Pud or fab breakfast. When you’ve got more bananas than sense and it suddenly feels a bit nippy, this cinnamon, banana oat crisp appears. As fast as making a piece of toast and so totally tasty my three have asked for thirds. Oats are a fibre rich mineral supply with a natural sedative from an alkaloid called gramine that can treat anxiety, depression and insomnia. Magnesium rich and with beta-glucan blood sugar levels are balanced. A caramelised banana with a difference.
  • 2-3 bananas
  • 1/2 cup Oats
  • 2 Eggs
  • Big pinch cinnamon or more to taste
  • (Optional for the sweet toothed 1 tbsp rice syrup)
  • Pinch sea salt
In a small, wide bowl beat eggs with fork and add oats, cinnamon, salt and syrup. Slice bananas lengthways and place in bowl covering flat side with as much oat coating as fits. Heat pan with oil/butter and fry gently too golden. Turn over and quickly heat top. Serve with sprinkle of cinnamon or syrup.
