A batch of my choc chia pots will keep you from running for the biscuit tin and have saved me this week:

Choco Mocha Chia Pots
1 x 200 ml tin Coconut milk
2 tbsp chia seeds
½ tsp ground cinnamon
2 heaped tbsp cocoa powder
2 tbsp maple syrup
(30 ml shot of espresso use decaff or don’t add)
Scrape the contents of the coconut milk out of the tin, and stir together with the remaining ingredients in a pot with a lid. Make sure you have combined everything together well – use a fork or a whisk.
Put the lid on and leave to sit in the fridge for at least 2 hours.
Spoon into two small serving pots and slice some fresh fruit over the top or a sprig of fresh mint to serve.

FIRST UP WEEK ONE

SUNDAY PREP time:
First Up to buy if you don't have it:
Bragg Organic Apple Cider Vinegar withThe 'Mother' Raw-Unfiltered 16oz (Double Pack) 2x473ml
Please make these:
1) My Simpler than anything BERRY JAM

2) Mega Roast Veg Tray - Health Hack Number 1
Go to the farmer's market/super market/veg stall near you and buy up the seasonal veg:
1 Butternut Squash
1 kg beetroot
1 celeriac
1 kg sweet potatoes
1 kg carrots
1 bag of kale
Fresh thyme
Then get home, peel and chop (apart from the kale) into 2 inch chunks about half of this load. Roast in a preheated oven at 180, drizzled in olive oil, sea salt and some thyme sprigs for 30- 50 mins until looking golden and crisping up. (Times really vary depending on space of veg and size etc) Leave to cool before storing - half at room temp, half in the fridge in airtight containers.
That's it. You are now ready for tomorrow. With a ton of veg for lunches/salads/snacking on/soup making etc. And some ace jam for breakfasts and snacks galore.

Sunday 15th JanuaryPREP TIME and what's coming up next.
First up, what you are going to need:
Chai Tea
For the new cosy Evening Relaxation Drink - like a hot chocolate but with so much goodness, recipe below.
The warming spices and creamy cashews make this a perfect wind down drink with serotonin and blood sugar balancing goodies.
A caffeine free version Rooibos chai is the best bet to have before bed:
Dragonfly Cape Malay Rooibos Chai Organic 40 g (Pack of 6)
Or there are the regular black tea with Chai infusions that taste great if caffeine isn't an issue:
Pukka Vanilla Chai Tea with 20 Sachets 40g
Or if you want the super luxe version, I adore Tea pigs:
Teapigs Chai Tea 125 g (Pack of 1, Total 50 Tea Bags)Chai Evening Elixir
1 mug of chai tea freshly brewed
2 tbsp cashews
1 cup coconut milk
1 tbsp vanilla extract
2 tbsp maple syrup (less if you don't need such a sweet kick)
a pinch of ground cloves
ground cinnamon to sprinkle (or add if needed more)
Pour 1/2 cup of the chai tea into the warmed coconut milk, and the remaining ingredients into a high speed blender and whizz until a creamy frothy consistency.
Sip before bed for a perfect night time cosiness in the cold.
2. Organic Walnuts
For the Walnut Pesto - going on everything this week - you'll need a supply of walnuts. As one of those foods that suffers badly from pests when grown they are heavily bombarded with chemicals, so I would really think about buying organic. If you buy a big Kilo bag you save a lot of money, and they send them straight to you:
RealFoodSource Certified Organic Walnut Halves (1kg)Walnut and Sage Pesto
2 Cups basil leaves, torn
1/2 cup walnuts, roughly chopped
1/4 cup olive oil
1 garlic clove
sea salt and pepper
handful sage leaves
1 tbsp nutritional yeast (or 1/4 cup grated parmesan if dairy is working)
Water as needed
Add the ingredients, except the water to the magi mix and blend until a not totally smooth paste. Drizzle in water as needed to make the texture a dolloping paste rather than a solid.
3. Whole organic chicken
Roast up a whole chicken today (Sunday) with halved onions, 500g carrots, whole, a quarters lemon underneath the chicken for it to rest on as it cooks and 4 tbsp olive oil and sea salt sprinkled over the top.
Roast at 200 degrees for 20 minutes, baste well then turn the heat down to 150 and baste every 20 minutes until skin looks golden, and pierced thigh has clear liquid running from it.
4. Another load of seasonal veg
Buy up the following when you go to the market/go online shopping:
Kale
Leeks
Sweet potatoes
Butternut Squash
Onions
Spinach
Parsnips
Frozen petits pois
Rocket leaves
garlic
Basil
Sage
Obviously the more the merrier so do buy anything else that takes your fancy. If you liked last week's veg roast up please do that technique again today.
5. Make a fast snack that's super delicious tobkeeobin the freezer all week and pop out when you need an energy hit/chocolate blast without reaching for the kit Kats:
