Strawberry Coconut Overnight Oats

A late summer flavour explosion, in a breezy pot of goodness that’s perfect for getting ahead in the morning. I got this recipe together for Quaker Oats to try and get more of you chomping on them in the morning - they're the best brekkie for you and your kids and this way they're instant!
Put everything in the fridge the night before and you’ve got breakfast to go all set!
Place all the ingredients, apart from the strawberries, into a 500ml jar/pot and stir together thoroughly.
Adjust the sweetness levels according to taste.
Leave for 2 hours/overnight up to 24hrs for everything to absorb the liquids and break down the starches.
Use 2 or 3 small glasses of pots to serve it into.
Fold in some of the sliced strawberries and reserve a few to push down the sides of the serving glasses.
Do add more milk to serve if it’s a little thick.
Scatter over extra coconut flakes and a strawberry slice.
- 1 cup traditional rolled oats
- 2 tbsp linseeds
- 2 tbsp desiccated coconut, unsweetened
- ½ tin coconut milk, fully mixed
- ¼ cup extra milk for serving
- 2 tbsp Coconut Yoghurt
- pinch sea salt
- 1-2 tbsp Raw honey to taste
- ½ cup strawberries, sliced
