A brightening refresher for the palate and the soul. That I saw on Tiktok and gave a few tweaks to before posting as a make-a-long video on Instagram - I couldn't get over it's simplicity and perfection.
Just the Simplest of Sorbets that requires no added sugar, and delivers a fabulous bowl packed with Vitamin C and fibre to perk up tired school days, hot summer days and strike days. 🍊
Clementine, Basil & Lime Sorbet
1 kg clementines or satsumas (do replace with oranges, blood oranges for equal joy)
1 lime zest and juice
6 basil leaves, torn
Peel and segment the fruit adding to a baking tray in single layer if you can fit in your freezer.
Cover well. Freeze for 6 hours / overnight.
Separate segments and add to a powerful blender.
Pulse, adding the lime juice and zest.
Add another tbsp of water if needed.
Continue pulsing until sandy, then blitz full speed until it softens to scoop serve. Add the basil and blend until combined.
