Chocolate Caramel Turtles

Just the prettiest little fleet of turtles to trot out at ANY occasion. These are crazy delicious and so cute, the kids will go mad for them!
  • 200g pecans
  • Caramel
  • ¼ cup almond butter
  • ¼ cup of cashew butter
  • 1/3 cup of coconut oil
  • 2tsp vanilla bean paste
  • Pinch sea salt
  • Chocolate topping
  • 3 tbsp cocoa powder
  • ¼ cup coconut oil
  • 3 tbsp maple syrup
Make the chocolate to start with. In small saucepan melt the coconut oil on a low heat. Remove from heat, adding in the cocoa powder and maple syrup and stir until silky smooth. Set aside. For the caramel, add the nut butters, coconut oil and vanilla paste to food processor. Mix well until a nice gooey texture. On a lined baking tray scoop one teaspoon of caramel, evenly spaced. Then add the 4 pecans as legs to the caramel body. Pushing the nuts in to stick together. Lastly with a tablespoon drizzle the chocolate over each turtle until just the caramel is completely covered. Repeat until the tray is full of turtles. Place baking sheet/tray in the fridge to firm up for a couple of hours.
