Caramel Cashew Balls

  • 1 Cup Cashews
  • 1 Cup Almonds
  • ½ Cup dried Apricots roughly chopped
  • 2 Dates
  • 3 Tbsp Almond Butter
  • 1 tsp Vanilla extract
  • Pinch sea salt
  • Water as required
Put nuts in processor, til a fine meal. Add apricots and dates and pulse til dark and combined. Add vanilla and almond butter and pulse carefully. If not forming a ball add a small amount of water until a sticky ball comes together. Roll into balls and freeze.
